Chipotle Chicken Wings w/ Avocado Crema
I am pretty new to the world of chicken wings, cooking them that is, when it comes to eating them I think I would classify as a trained professional.

Chipotle Chicken Wings w/ Avocado Crema
I have been experimenting with different ways of cooking chicken wings. In my recipe for Sticky Honey & Ginger Chicken Wings I marinated them for a few hours and then baked them in the oven in all of the liquid resulting in super flavourful and tender wings.


For these Whole30 Chipotle Wings I decided to try a different method, and baked the wings on a wire rack before coating them in sauce. Baking them on the rack makes the wings nice and crispy, resulting in a texture similar to deep frying.

I have to admit that I love the crispiness and would have happily eaten them all before even adding the sauce, but once the sauce was added, holy deliciousness.


This chipotle sauce is the perfect balance of sweet and spicy. To keep the recipe SCD legal I use dried ancho chilies because I find that chipotle paste often has preservatives in it. If you aren’t following the Specific Carbohydrate Diet then feel free to use chipotle chili paste or chiles in adobo in place of the dried chilies, it won’t change the flavour or consistency of the sauce.

The chipotle sauce is slightly spicy, so I made avocado crema to serve which helps to cool some of the heat from the chili.


Avocado crema is a smooth and creamier version of guacamole which is traditionally made using sour cream. In my healthier version I use lime juice, cilantro and apple cider vinegar to give the crema a refreshing acidic flavour.


This chipotle sauce is thick, spicy and so delicious, I think you guys are going to love it. The sauce would also be great served on other cuts of chicken such as thighs or drumsticks, just bake it in the oven as you would the wings and then toss in the sauce.

These chicken wings are baked until crisp and then tossed in a spicy chipotle sauce. They are served alongside a simple avocado crema which is smooth, creamy and so delicious.

Ingredients
  

Chicken Wings

  • 1 kg (2.2lbs) chicken wings
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup chopped chipotle or ancho chili *
  • 1/4 cup dates
  • 1 tsp cumin
  • 2 tsp smoked paprika
  • 2 tbsp melted coconut oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp water
  • 1 tbsp chopped cilantro for garnish

Avocado Crema

  • 1 large avocado
  • 1 tbsp lime juice
  • 1/4 cup cilantro
  • 1 tbsp apple cider vinegar
  • 1-2 tbsp water
  • 1/4 tsp salt

Instructions
 

Chicken Wings

  • Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Place a wire rack on a baking sheet.
  • In a bowl toss the chicken wings with the olive oil, salt and pepper and lay them out evenly on the wire rack. Bake the chicken wings in the oven for 35 minutes until crispy and golden in colour. 
  • While the chicken wings are baking, in a blender combine the chili, dates, cumin, paprika, coconut oil, vinegar and water. Blend until completely smooth. If the mixture is too thick add a splash more water. 
  • When the chicken wings are done, remove from the oven and toss them in the chipotle sauce. 

Avocado Crema

  • In a blender combine all of the ingredients for the avocado creme and blend until smooth. Add more water if you prefer it to be more liquid. Serve alongside the chicken wings for dipping. 

Notes

*I use a dried chili which has been soaked in hot water for 10 minutes but chopped Chipotle peppers in Adobo Sauce also works.
