This Chicken & Cauliflower Rice Soup is incredibly easy to make and takes just 20 minutes, making it perfect for Monday night dinner when you don’t feel like cooking. Unfortunately this soup doesn’t freeze well, but leftovers will last for up to 3 days in the fridge. 

 

 

I LOVE the Thai flavours of this Thai Chicken Larb Salad. This hearty salad takes just 30 minutes to make and is packed with the flavours of fresh herbs. You can prepare the ground chicken mixture in advance and simply heat it and spoon it over lettuce before serving. 

 

 

This One Pan Mediterranean Cod is such a great recipe to switch up the way you make fish. I love the combination of flaky white cod with the chunky tomato sauce that is packed with tomatoes, peppers and olives, but you could substitute the fish for shrimp or chicken if you prefer. Short on time? You can prep the sauce and veggies in advance and sear the cod and cook it for a few short minutes in the sauce before serving. 

 

 

This one pan Creamy Mushroom Chicken is a comforting 30 minute meal tha I find myself making over and over again. You can swap the chicken thighs for chicken breasts, or use pork chops instead. Enjoy it on its own or with a side of creamy cauliflower mash.

 

 

For this weeks Friday night takeout fakeout its Moo Shu Pork! This 30-minute Whole30 spin on the classic Chinese takeout dish is so delicious served in lettuce cups in place of pancakes and drizzled with homemade hoisin sauce. You will definitely want to ensure there are leftovers because they are just as good reheated over the following few days. 

 

 

This Chicken Shawarma requires minimal hands on prep and is a real crowd pleaser. Simply marinate chicken in a delicious combination of spices overnight and then bake it in the oven before serving on a platter drizzled with creamy lemon tahini sauce. I like scooping the chicken into lettuce cups, but you could alternatively serve it with pita for those not on a grain free diet. 

 

 

This Classic Beef Lasagna tastes like traditional lasagna, but is grain free, dairy free and Whole30! It takes a bit of time to make, but freezes incredibly well, so double or even triple the recipe to freeze for quick and easy dinners in the coming months.
