Weekly Meal Plan: April 19th – 25th
The dishes we have chosen for Monday – Friday for this week’s Meal Plan are all one-pan and Whole30. For Monday we have a simple chicken dish with garlic, mushroom and bacon that is an easy dish to add to your regular rotation. We have also included a dairy-free spin on Cheese and Broccoli Soup from my cookbook, a fast 10 ingredient, 30 minute stir-fry and a Spanish inspired Chorizo and Shrimp dish. Saturday night is a fun taco feast and for Sunday it’s one of my all time favourite comfort meals, meatballs inspired by my Italian Nona.

Monday – Garlic Mushroom & Bacon Chicken Thighs

Tuesday – “Cheesy” Broccoli Soup
This soup “Cheesy” Broccoli Soup from my cookbook (page 172) is rich, creamy, and delicious. I love a smooth soup, but you can adjust the texture to your liking by blending it for just a few seconds to get small bits of broccoli, or skip the blending step altogether for a chunkier soup. I’m happy to report that using nutritional yeast gives the same cheesy flavor as cheddar, so you won’t feel like you’re missing out if you go with the dairy-free option.

Wednesday – Simple Green Bean, Chicken & Ginger Stir Fry
This Green Bean, Chicken & Ginger Stir Fry is incredibly easy to make. It contains less than 10 ingredients and can be made in under 30 minutes which makes it perfect for a quick and easy weeknight meal. It’s Whole30, Paleo, Grain Free, Gluten Free and very delicious!

Thursday – One Pan Spanish Chorizo & Shrimp
This Spanish Chorizo and Shrimp is a one pan 30-minute meal that uses primarily pantry staples and is perfect for an easy weeknight meal. The shrimp are pan seared and tossed with spicy chunks of chorizo sausage in a rich tomato sauce. This Spanish inspired dish is Whole30, Paleo, Grain Free, Gluten Free, Dairy Free and Specific Carbohydrate Diet Legal.

Friday – Crispy Lemon & Herb Chicken with Fennel
This Crispy Lemon & Herb Chicken with Fennel is a great one pan dish that works just as well for weeknight dinner as it does for serving to guests. The chicken has a delicious crispy skin and is coated in a lemon & herb sauce and cooked in the oven over caramelized fennel. Saturday – Celery Root Tortillas & Shredded Chicken Tacos

Sunday – The Best Italian Meatballs
These are truly THE BEST Paleo Meatballs ever! Incredibly moist and flavourful, they are just like the meatballs that my Italian grandma used to make, but thanks to a few simple tricks they are also Paleo and Whole30!
