Sunday – Harissa & Orange Spatchcock Roast Chicken
Roast chicken was regularly on the menu for Sunday night dinner when I was growing up. I remember always standing close to my dad while he carved the chicken so that I could sneak pieces of the crispy skin when no one was looking. (I confess that I still do that now.) Spatchcocking a chicken (a simple four-minute task that involves removing the backbone to lay the chicken flat) reduces the cooking time, helps to ensure the whole bird cooks evenly, and increases the amount of delicious crispy skin. Intimidated by the process? You can ask your butcher to do it for you; alternatively, use a combination of skin-on, bone-in thighs, legs, and breasts, but reduce the oven temperature and time to 350oF for 30 minutes.
