Monday – Chinese Chicken Salad
This Chinese Chicken Salad is crunchy, light and so delicious! It’s packed with crunchy carrots, almonds, shredded chicken, sliced peas and juicy chunks of orange. This salad takes less than 30 minutes to make and leftovers will last for up to 3 days in the fridge.

Tuesday – BLT Cauliflower Salad with Ranch Dressing
This BLT Cauliflower Salad is a cross between a BLT (bacon, lettuce and tomato) and a low carb potato salad. It’s loaded with yummy ingredients all smothered in a homemade ranch dressing. This is a great make ahead salad that is perfect for a summer barbecue or picnic. This BLT salad is Whole30, Paleo, Grain Free, Gluten Free, Dairy Free, Keto and Specific Carbohydrate Diet Legal.

Wednesday – Steak Fajita Skewers with Cilantro Chimichurri
This is a fun spin on fajitas that’s perfect for cookout season. The beef is marinated in a spicy sauce, quickly grilled, and then served with a cilantro chimichurri, which really packs a punch of flavor. There are many fun ways to serve these: on small skewers with chimichurri on the side as an appetizer, tossed into a salad, or with Celery Root Tortillas (page 44) as part of a build-your-own-fajita bar with all of the fixings.

Thursday – Shrimp Etouffee

Friday – Asian Chicken Skewers

Saturday – Eggplant Parmesan
This Paleo Eggplant Parmesan is a healthy twist on the classic Italian dish. It’s loaded with layers of tender eggplant, tomato sauce and a cashew based “ricotta” that is all baked in the oven until bubbling. This is a real crowd pleasing dish that no one will even know is Vegan and Whole30!

Sunday – Pulled Brisket Sliders
These Pulled Brisket Sliders are so delicious! Brisket is cooked until fall apart tender and smothered in a homemade Whole30 BBQ sauce. The brisket is served on a grilled slice of butternut squash with creamy coleslaw and a slice of pickle. These are a real crowd pleaser and great for serving as part of a game day spread.
