Weekly Meal Plan: March 15th – 21st
With spring right around the corner we have added some lighter dishes to this weeks meal plan. Monday is an Italian Wedding Soup which you could make on the weekend and reheat on Monday night for a quick and easy dinner. Weeknight dinners also include a vegan and Whole30 Mac and Cheese, a light salad with a unique dressing and a Salmon Nicoise traybake that takes just 30 minutes to prepare. On the weekend it’s Chicken Souvlaki served with a dairy free tzatziki that you will swear tastes just like the real thing and Middle Eastern Stuffed Eggplant which are great for reheating for lunch the next day.

Monday – Italian Wedding Soup
This Paleo Italian Wedding Soup is a healthy low carb spin on the traditional Italian soup. It’s packed with lots of kale, onion, carrots and wispy egg plus juicy chicken meatballs all simmered in a light lemon chicken broth. This soup is Whole30, Paleo, Keto and SCD Legal.
Tuesday – Cauliflower Mac & Cheese
This Cauliflower Mac & Cheese is filled with oven roasted bites of cauliflower that are baked until tender and then coated in a creamy dairy free cheesy sauce. This Vegan and Whole30 spin on Mac and Cheese is perfect for those times when you are craving something comforting but want to be healthy. It’s Grain Free, Gluten Free, Dairy Free, Vegan, Whole30 and Keto.
Wednesday – Grilled Radicchio & Orange Salad with Cinnamon Dressing
This Grilled Radicchio & Orange Salad is such a fun alternative to boring salads. The grilled radicchio is served with lettuce, juicy orange segments and crunchy pecans which are all tossed in a cinnamon dressing. The flavour combination sounds strange but is absolutely delicious. This salad can be served as a light appetizer or side salad and is Paleo, Vegan, Grain Free, Gluten Free, Dairy Free and Whole30.
Thursday – Sheet Pan Salmon Nicoise
This 30-minute sheet pan Salmon Nicoise is perfect for weeknight dinner. All of the classic ingredients of Nicoise salad are placed on a sheet pan, tossed in a light herb dressing and baked in the oven with pieces of salmon. This is a fun spin on the traditional French salad and it’s Whole30, Paleo, Keto and Specific Carbohydrate Diet Legal too!
Friday – Butter Chicken Meatballs
These Butter Chicken Meatballs from my cookbook (page 202) are a fun spin on butter chicken is a wonderful hearty dish that packs a lot of flavor. The rich and creamy sauce is the star of the show, and the tender meatballs soak a lot of it up to make every bite saucy and delicious. Serve these meatballs with a side of cauliflower rice to ensure that you don’t let a drop of sauce go to waste.
Saturday – Chicken Souvlaki
These Chicken Souvlaki Skewers are simple yet incredibly flavourful. Cubes of chicken are marinated in a lemon, garlic and herb sauce and then grilled. A great go to recipe for grilling because they are easy to make and go with everything! They are also Paleo, Whole30, Keto and Specific Carbohydrate Diet Legal!
Serve the chicken skewers with this Dairy Free Tzatziki that tastes just like the real thing but is made with a cashew base. It’s loaded with garlic, lemon, dill and grated cucumber. It is quick and easy to prepare and is Vegan & Whole30 too!
Sunday – Middle Eastern Lamb Stuffed Eggplant
These Middle Eastern Lamb Stuffed Eggplant are so flavourful! Eggplants are stuffed with a rich ground meat mixture seasoned with Middle Eastern spices and chopped nuts, baked in the oven until tender and then drizzled with a lemon tahini sauce. These stuffed eggplants are Whole30, Paleo, Keto, Dairy Free, Grain Free, Gluten Free and Specific Carbohydrate Diet Legal.
