This weeks meal plan is packed with my all time favourite pasta dish, a fun spin on tacos for Taco Tuesday, a comforting 30 minute soup, and my go-to spicy chicken drumstick recipe. Monday – Butternut Squash Pasta with Alfredo Sauce

Butternut Squash Pasta with Alfredo Sauce

This Butternut Squash Pasta with Alfredo Sauce is a healthy grain and dairy free spin on pasta with alfredo sauce is so comforting. Butternut squash noodles are used in place of pasta and smothered in a creamy 3-ingredient cashew alfredo sauce that’s vegan and dairy free. This 30 minute pasta dish is perfect for a quick and easy weeknight meal.  

Tuesday – Sticky Ginger & Sesame Beef Tacos

Korean Beef Tacos

These tacos filled with Korean style Beef (or bulgogi) from my cookbook (page 214) are seriously epic. After two hours of marinating, the thinly sliced beef is incredibly tender and becomes slightly caramelized when seared. This meal quickly became a family favourite in my house; it’s a great alternative to the usual Mexican-inspired tacos we eat. I like serving these tacos in warm grilled celery root tortillas, but lettuce cups would work just as well. I highly recommend making extra beef so that you can enjoy it with freshly made coleslaw the next day; it’s a delicious use for leftovers that you shouldn’t pass up.

Wednesday – Spicy Chicken & Noodle Soup

This paleo Spicy Chicken Noodle Soup is loaded with chunks of chicken, scallions, chilies and noodles all simmered in a spicy broth. The daikon radish noodles are long and thin and perfect for slurping. Thursday – Spice Rubbed Chicken Drumsticks

Sunday – Greek Roast Chicken

This Greek Roast Chicken is so simple and requires just a handful of ingredients but results in a juicy, flavourful chicken.  It’s a fuss free family friendly dish that just happens to be Paleo, Keto and Whole30.
