Asian Cabbage Slaw with Shrimp

This slaw may look simple but it’s seriously flavour packed. It’s loaded with crunchy cabbage, carrots and peppers plus perfectly seared shrimp all smothered in the most insanely addicting ginger, almond butter and sesame dressing. Best of all it takes just 30 minutes to make and leftovers are just as good the next day.

Tuesday – Sun-dried Tomato Crusted Halibut

Sun-dried Tomato Crusted Halibut

This is one of my absolute favourite fish recipes. Halibut (or cod) is coated in a crust of sundried tomatoes, basil, chilies and almond flour and hen quickly baked in the oven. This dish is truly a show stopper and is incredibly quick to prepare!

Thursday – Korean Beef Bowl

Korean Beef Bowl

This easy Whole30 Korean Beef Bowl is filling and so flavourful. Caramelized beef, cauliflower rice, shredded cabbage, avocado and carrots are served in a big bowl, topped with a fried egg and drizzled with spicy mayo, it’s so so tasty! This recipe takes just 30 minutes to make and is Whole30, Paleo, Gluten Free and Dairy Free.

Sunday – BBQ Pulled Pork & Coleslaw Bowl

BBQ Pulled Pork & Coleslaw Bowl

The recipe for these BBQ Pulled Pork & Coleslaw Bowls from my cookbook (page 228) gives you all of the deliciousness of a pulled-pork sandwich without restricting yourself to the small amount of filling that fits between two buns. You can pack these bowls sky-high with the saucy BBQ shredded pork, creamy coleslaw, tender oven-roasted cubes of butternut squash, and pickles. This is a real crowd- pleasing dish that doesn’t require a lot of time if you prepare the pork in advance. I like making extra pork to freeze for last-minute game day spreads.
