Corn Fritters
Diet: Dairy Free, Gluten Free
  • 3 cups corn
  • 1 large egg separated plus 1 large egg white
  • 1 tbsp gluten free flour
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • Pinch of pepper
  • 4 tbsp vegetable oil
  1. In a bowl mix corn, egg yolk, flour, sugar, salt and pepper
  2. In another bowl whisk egg whites until stiff but not dry using a hand held mixer
  3. Fold egg white into corn mixture
  4. Heat 2 tbsp oil in a large pan over medium high heat
  5. Drop spoonfuls of the batter into the oil ensuring there is minimum an inch of space between each
  6. Cook until golden on the bottom ( approx 1 -2 minutes) and then turn over using a spatula and cook until golden on the other side
  7. Serve immediately
