Lamb Burgers

  • 300 grams ground lamb
  • 1 egg
  • 1/2 tsp dried oregano
  • 1 tbsp finely chopped fresh parsely
  • 2 tbsp finely chopped fresh mint
  • 1 clove garlic crushed
  • 1 tbsp red wine vinegar
  • 1/4 tsp salt and pepper
  • 1 tbsp almond flour

Burger Toppings

  • 1/3 cup olives
  • 8-10 thin slices cucumber
  • 1 tomato, thinly sliced
  • 4-6 lettuce leaves
  • 2/3 cup tzatziki
  • 8-10 slices grilled eggplant
  • 1/3 cup feta (optional) (omit if Whole30, Paleo, Dairy Free)

  • Combine all of the ingredients for the burgers in a large bowl and, using your hands, mix until the ingredients are evenly incorporated.
  • Divide the mixture into 4 evenly sized balls and using your hands for each ball into a patty. Make a small indentation with your thumb in the center of the burger to ensure it cooks evenly.
  • Preheat the barbecue or a grill pan to medium high heat and once up to temperature, cook the burgers for 4 minutes per side until cooked through (but don't overcook as they dry out).
  • Prepare the board by laying out the lettuce, sliced red onions and tomatoes, chopped olives, feta, tzatziki and grilled eggplant
