If using wooden skewers, soak them in water for a minimum of 30 minutes to ensure they don't burn
In a bowl, whisk together the honey, balsamic, olive oil, crushed garlic, thyme and grated onion until well combined.
Cut the beef into small bite sized pieces and place in a deep dish or bowl. Pour the marinade overtop and put in the fridge to marinate for a minimum of 4 hours but preferably overnight.
Set your barbecue to medium heat
On a skewer place a cube of beef, slice of red onion and fig, repeat until full. Continue with the remaining skewers. Do not throw away the excess marinade
Place the skewers on the grill and lightly brush with the marinade. Cook for approximately 7 minutes, turning every few minutes to ensure even cooking. Be sure to brush the skewers a few times with marinade while cooking.
Before serving sprinkle with salt, pepper and thyme and serve.
