These Paleo Chicken Tenders are a healthy spin on a childhood favourite. They are coated in a crispy almond flour and shredded coconut breading and cooked in the airfryer
In a shallow bowl stir together the almond flour, shredded coconut, salt, pepper, paprika, garlic powder, onion powder and chili powder.
If using chicken breasts, cut them into 1/2 inch thick strips.
Crack the eggs into a shallow bowl and whisk them until broken up
Dip each chicken tender into the egg ensuring its well coated, then dredge it in the almond flour mixture. Place each coated chicken tender in a single layer in the air fryer basket (you will likely have to cook them in 2 batches).
Generously spray the chicken tenders in cooking oil. Cook the chicken tender for 6 minutes before flipping them over, spraying with more cooking oil and then cooking for a further 3 minutes until the chicken is golden in colour. Remove from the airfryer and repeat with the second batch.
