Bring a large pot of salted water to a boil. Add in the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta
In a skillet on medium high heat add in the butter and once melted add 3 tbsp of lemon zest and the minced garlic. Cook for 2 minutes to release some of the flavor and then add in the cream. Stir and then add in the cream and parmesan cheese plus ½ cup of pasta water. Stir vigorously to melt the cheese into the sauce, keep stirring until the sauce is smooth and creamy.
Add the cooked linguine to the pan and toss with tongs to ensure it’s well coated in the sauce. Start by adding in 1 tbsp of lemon juice and toss, taste and add an additional 1 tbsp of lemon juice if you prefer a tarter lemony flavor.
Serve and garnish portions with additional lemon zest and fresh black pepper.
