This Thai Watermelon salad is a delicious summer salad! Chunks of watermelon tossed in a Thai dressing and served with chilies and cashews.

Ingredients

cubed watermelon

cubed cucumber

small shallots
very thinly sliced

shredded fresh mint

Thai red chili, finely sliced

shredded Thai basil
1/3

chopped toasted cashews
Dressing

tbsp
sesame oil
1
tsp
grated ginger
1/2
tsp
lime zest

tsp
lime juice

tbsp
fish sauce
(omit if vegan)

tbsp
coconut aminos
(or tamari/soy sauce)

tbsp
orange juice
Instructions
In a small bowl whisk together all of the ingredients for the dressing.
In a large bowl or serving platter place the watermelon and cucumber. Top with the sliced shallots, cashews, sliced chili, mint and Thai basil.
Pour the dressing overtop and gently tossed until well combined. Enjoy!
