Preheat the oven to 425 degrees Fahrenheit and place the sheet pan in the oven to heat up as the oven preheats.
Cut the potatoes into thin fries (approximately ¼ inch in thickness). Place all of the sliced potatoes in a bowl and fill with hot water. Leave to rest for 30 minutes.
Drain the fries and then place them in a dish towel and completely dry them so there is no moisture.
Place the fries in a dry bowl and add in 1 tbsp oil, salt, pepper, and garlic powder and toss to ensure all of the fries are well coated.
Remove the hot sheet pan from the oven and drizzle with 1 tbsp of olive oil, and then add the fries, ensuring they are well spread out and not overlapping.
Put the sheet pan in the oven and leave the fries to cook for 18-20 minutes (keep an eye on them to ensure they aren’t burning).
Once the fries are tender, remove the sheet pan from the oven and flip the fries over using a spatula. Turn the oven to broil and return the fries to the oven to cook for a few more minutes until golden.
