This Homemade Whole30 Chorizo is easy to make and a great staple to have in the freezer to add to recipes. Store bought chorizo is often packed with additives so this is a great alternative you can make at home especially if you are following a restrictive diet such as Whole30 or the Specific Carbohydrate Diet.

I absolutely love chorizo, it’s by far my favourite kind of sausage, but it can be incredibly hard to find a clean version in stores that isn’t packed with additives and fillers.

Full disclosure, the texture isn’t exactly like store bought chorizo, but the flavour is very close.

I recommend using ground pork with as high a fat percentage as possible. Grinding up bacon also helps improve the texture and flavour in the chorizo.

To the ground pork and bacon you then add a mixture of paprika, oregano, chili flakes, pepper, cumin, chipotle powder and cumin along with apple cider vinegar for a bit of acidity.

Although you can easily cook the meat mixture right away, leaving it to rest in the fridge overnight really enhances the flavours. You can also freeze this meat raw or cooked.

For cooking I prefer to make this homemade whole30 chorizo in a crumbly texture to add into breakfast casseroles or add to eggs benedict or traybakes, but you could form it into patties that would be great for breakfast on the go.

Here are a few different recipes that you can make with this chorizo….
- Mexican Eggs Benedict
- Grilled Kale Caesar Salad with Crispy Chorizo
- Spanish Chicken & Chorizo Traybake
- Breakfast Tacos
- Cauliflower Rice Paella

I made a batch of this today and cooked a small sample to see how it tasted! It is a fantastic recipe! I did change it but only slightly -not enough to give the original recipe the 5 star rating. I did add 1/2 teaspoon of garlic powder, because I love garlic. I also did 1/2 smoked paprika + 1/2 hot paprika for the paprika because it is what I had.
Thank you for a fantastic taste!!
Sounds great! Any reason why you couldn’t just put it all in the food processor to combine the flavors and make the texture finer? Any downsides?
You can definitely do that! Would speed things up and I’m sure work just as well 🙂
