Sheet Pan Greek Chicken
This Sheet Pan Greek Chicken recipe has been one of the most popular recipes on this site for over 3 years, and with good reason! It really couldn’t be any easier to make with less than 10 minutes of hands on prep. It’s a great all in one meal and is loaded with roasted peppers, tomatoes, artichokes and olives, all tossed in a yummy sauce and cooked with pieces of chicken. Whether you are doing a Whole30, Paleo, Gluten Free or just love food, this Greek Chicken Traybake is a great crowd pleasing meal.
Sheet pan recipes have become the star of my weeknight dinners. I am all about the low maintenance midweek meals that can be prepared with the absolute minimum amount of effort, taste good, and ideally be eaten as leftovers over the following days. This Sheet Pan Greek Chicken ticks all those boxes and more. It’s packed with beautiful healthy ingredients including red and yellow peppers, cherry tomatoes, red onions, wedges of lemon and loads of garlic and basil.

CAN I USE A DIFFERENT CUT OF CHICKEN?
Absolutely! While I prefer using boneless skinless chicken breasts or thighs, bone in also works well. If using bone in cuts of chicken remember to increase the cook time by 15 minutes
I DON’T EAT CHICKEN, ANYTHING ELSE I CAN USE?
Swap the chicken for salmon or a white fish such as cod or halibut. Bake the veggies in the oven for 15 minutes before adding the fish on top and then baking for another 15 minutes until cooked through.
HOW TO MAKE IT DAIRY FREE?
If you are on a dairy free diet such as Paleo or Whole30, skip the feta and add in small slices of potato
HOW TO MAKE THIS SPECIFIC CARBOHYDRATE DIET LEGAL?
Only a few minor adjustments can make this recipe Specific Carbohydrate Diet Legal. Be sure to use aged balsamic vinegar (aged for a minimum of 15-years) and skip the feta.
CAN I ADD OTHER VEGETABLES?
Definitely! Other vegetables that would be a great addition to this recipe include asparagus, wedges of zucchini, cubed eggplant or baby potatoes.
WHAT SHOULD I SERVE WITH THIS SHEET PAN GREEK CHICKEN?
I love serving this sheet pan meal with tzatziki, it really ups this meal to the next level. You can use store bought tzatziki, or if you are looking for a dairy free tzatziki, try making this absolutely delicious one which you can quickly whip up with the sheet pan is cooking, and its vegan, whole30 and paleo too!
You can keep things simple and serve this sheet pan meal with a salad for a light meal. Alternatively you can serve it with roast potatoes or rice (or cauliflower rice). The chicken and veggies have so much flavour you can keep everything else simple.
CAN I PREP THIS SHEET PAN GREEK CHICKEN IN ADVANCE?
This Sheet Pan Greek Chicken is a great make ahead dish. You can chop all of the veggies and put them on the tray with the chicken up to a day in advance. 30 minutes before serving simply pour the sauce overtop and bake in the oven, it doesn’t get much easier than that.
WHAT TO DO WITH LEFTOVERS
Leftovers will last for up to 4 days in the fridge. I like to cut up the leftover vegetables and add them into a salad along with the chicken. You can even use any excess sauce from the bottom of the tray as dressing.

Sheet Pan Greek Chicken
Equipment
- 1 21x15inch Sheet Pan or Baking Dish
Ingredients
- 1 red pepper cut into 2 inch pieces
- 1 yellow pepper cut into 2 inch pieces
- 1 red onion cut into eighths
- 2 cups cherry tomatoes
- 1/2 cup artichoke hearts
- 1 lemon
- 2 large chicken breasts, cut in half or 4 chicken thighs
- 2 cloves garlic crushed
- 1/4 cup olive oil
- 1 1/2 tbsp balsamic vinegar
- 1/2 tsp smoked paprika
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/2 tsp pepper
- 2 tbsp chopped fresh basil
- 2/3 cup kalamata olives
- 1/4 cup chopped feta (omit for Paleo/Whole30)
Instructions
- Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius)
- In a large baking sheet or roasting tray, add the chopped peppers, red onion slices, artichoke hearts, lemon wedges and tomatoes.
- In a bowl whisk together the garlic, olive oil, vinegar, paprika and oregano. Pour 1/3 of the sauce over the veggies, sprinkle with salt and pepper and toss until well coated. Place the chicken pieces on top of the veggies and brush sauce. Bake in the oven for 25 minutes.
- After 25 minutes, add in the feta, chopped basil and olives. Pour the remaining sauce over the tray and return to the oven to bake for another 5-10 minutes. Check the chicken to ensure its no longer pink. Sprinkle with basil and serve.

Great recipe! I added broccoli to the roasted veggies and served with jasmine rice and homemade cold tzatiki sauce. It was perfect together! Without the rice and tzatiki sauce I think it would be fine, but this introduced more flavors.

Wow! So good!! I was skeptical about the lemon but it was good. I added portobello mushrooms, substituted tofu for chicken, and added way more feta just because I like it. I love another commenters idea of serving with rice.

Absolutely delicious and easy. With the “leftovers” (I only had veggies left, had to cook a little more chicken) I used a flatbread and made a pizza out of it! It was amazing

I have made this twice and it is delicious. I have bunco at my home this month and I plan on serving this dish to 12 women…it’s just that good! I will serve it with orzo, spinach, lemon zest and olive oil as a side with crusty rolls. I know the girls will love it.

This is so good. Best recipe I have found online. We have it at least every other week. I use Mediterranean flavored feta cheese and kalamata olives. One question: What is the calorie count per serving?

Made this last night. It was good but came out very watery. I have an older oven so maybe it wasn’t up to tempurature. I’ll try again because it did have good flavor.

We loved this. I used chicken thighs instead of breasts. The combination of flavors makes the dish. I made some yukon gold potatoes in the same pan and they absorbed all the flavors. This will be a staple in my recipes. My husband is still thanking me. I’ve been cooking for 50 years and I am a gourmet cook. Delicious!!

This is a lovely recipe but there are a couple notes I would give to others intending to make it. My family loves big flavors which requires seasoning . Here’s a few tips and techniques that Takes this recipe from good to killer.
I made this the first time as it reads and my critics unanimously voted for more herbs . I can’t imagine Greek anything without oregano so I changed all the herbs to fresh herbs and added 1 tsp of chopped fresh oregano and 1 tsp ground pepper. I salt and peppered the chicken all over. Onward to the artichokes. The Recipe doesn’t say if they s/b frozen, marinated or fresh. I used frozen cause they are tastier, less expensive and hold there form after baking. Lemons! Lemons are not listed in the ingredients but are noted in the instructions. Baked lemons with chicken are wonderful but they must be Meyer lemons and placed on top so they brown and caramelize. Lay small wedges of Meyer lemons around the edges and let them brown or even a little char on the edges. They are absolutely wonderful taken with a bite of chicken (ask Ina). Lastly, the feta must be the type that softens. French feta is my personal favorite but Do a little research and tasting before you select one. Greek feta or 365 would be very disappointing in my opinion.

Greek Chicken Traybake. Made a couple of changes to suit our taste but basically the same and it was delicious. Very easy and definitely worth making 😊
I made this dish for a family gathering. Looked great and flavours were delicious but the chicken breasts were very very dry. Definitely wouldn’t cook them at 200 again with out covering with foil or substitute chicken thighs instead.
This was delicious! I roasted fresh green beans with it too. My husband wants me to add shrimp and sausage next time too!
Made this last night and thought it was very good. Following some of the other comments, I did add more spices – Greek seasoning and oregano. I put more garlic than the recipe called for just because we like a lot of garlic. It took the full 30 minutes for the chicken to cook and it wasn’t at all dry. I had some split chicken breasts that I had just bought the night before so cut them off of the bone and then split them in half so they would be thinner. I also added a few potatoes cut in chunks but they didn’t get cooked all of the way so I had to put them in the microwave to finish cooking. In the future, I would partially cook them before putting in the oven. Other changes I would make would be to cut the onions in smaller pieces just because my husband didn’t like the big chunks. I would also add more peppers and fewer tomatoes. The cherry tomatoes are like little heat bombs when you bite into them so I would suggest cutting them before eating them. I wonder of some meaty Roma tomatoes cut into chunks would work? And of course I added more Feta cheese because, really, cheese. I also used the whole can of artichoke hearts because I didn’t know what else I would do with them and we like them. I substituted Kalamata olives because it is Greek and my husband prefers those over black olive. I also left out the lemon because I don’t like lemon and honestly, thought it was great without it.. I will make again.
Mediterranean eating at its best! Delicious flavours, so easy to prepare and make, even on a weeknight. I added two Birdseye chillIes to the first part of the bake. Hubby is drinking the leftover juice as I type. If you’re not averse to carbs we said this would be great with crusty bread next time. It’s a keeper. Photo added to Pinterest.
Great flavours.. I kept my chicken breast thick, marinated it, seared briefly for colour, and removed it at 15 mins to rest. Cooked veg for the 25 then under a hot grill to char. Added olives feta and basil at the end.. no extra heat. Dressed the chicken with pesto 🎉

Very good, light and flavorful. I added extra seasoning and squeezed extra lemon in my sauce. I made my own Greek blend seasoning. I also added bite sized potatoes. Veggies were on point! I did overcook my chicken. I seared Whole breasts then placed in oven, but next time I will do like another reviewer said and take chicken out early to rest or use bone in chicken breasts

Stupid simple to make and definitely tasty. Depending on your oven’s capacity, this recipe could easily be doubled or tripled. I used thighs to save a trip to the store. The chicken thighs required about 10 minutes extra baking in order to reach an internal temperature of 165 Fahrenheit, So plan accordingly.
I had planned to make something else and then came across this recipe. Amazingly I had all the ingredients and am leaving for vacation so needed to empty the fridge anyway! It was superb! I had some fresh rosemary so threw tat in along with some artichoke hearts. Served it with orzo. It was fabulous and I can’t wait to make it again! Thanks!!!

I made this recipe the other night for dinner the next night and I have to say that it WAS DELICIOUS! I used boneless thighs so I put the veggies in to roast for 10 minutes before adding the chicken. I used boneless/skinless thighs, 1 red and 1 yellow pepper, a large sweet yellow onion, I couldn’t find fresh Basil in February, so used 1 tsp. dried basil, added a big handful of grape tomatoes and it was really marvelous! What a great, flexible recipe. I added sautéed mushrooms and served the remainder for leftovers too.. Yum!
I made it last night and my husband said it was better than any restaurant! It was delicious but pretty labor intensive. I was chopping and measuring for 45 minutes. the dish looked gorgeous and the chicken was so tender and tasty. I used skin on bone in and skinless boneless thighs…the skin on chicken was much better. I would do that for company and the skinless for just us. i added baby portobellos and put it under the broiler for 3 minutes at the end. Thanks for a wonderful new recipe!
The temperature for baking the chicken in this recipe does not cook the chicken. It seems there is an error in the recommendation for cooking temp

This turned out so good! I used a red and orange bell pepper, a white onion, A Jalapeño, baby potatoes, and 2.25 lbs chicken breast tenders. Cooked at 400 f for 25 m, then added lots of prunes feta and basil and cooked another 5 min. It was great and the chicken was not at all dry. We were a bit low on veggies so I might double the potatoes next time.

I have been cooking this recipe at 390 degrees for over a hour and it still isn’t done.
Fine recipe BUT the instructions say pour remaining sauce over dish at the end of baking – Making the sauce as is – results in about a little over a 1/4 cup – I used 1/3 of that to coat the vegetable and the remaining sauce was just enough to brush on the chicken so so ??? should the sauce be doubled? Also I wondered about higher heat to start the veggies off and then lowering it to 390 when the chicken was put on top. We shall see . . . under a no travel order here so looking for something that I could make using my pantry. Will miss the feta – oh well

It was okay. I used chicken thighs instead of chicken breast. It just didn’t wow my husband and I. I don’t think I’ll be making this again. One thing, it did looked like the photo of the dish. I guess it looked better than it tasted. I so wanted to like it.

It was great and I was giving it 5 stars but the app failed me. I had kalamata olives and used that. The sauce and feta and lemon along with the chicken juices (used thighs) made such a delicious sauce. Easy and tasty; a definite repeat!
This was so good first day and second day. How long would it be to use cod next time? Love that sauce so so much. I used lemon juice instead of vinegar and a teaspoon of brown sugar.
So happy you enjoyed it! I would recommend adding the cod at the same time as the feta (ie with about 10 minutes left to bake)

This is amazing. I happened upon the recipe. I don’t follow any diet. I have made this recipe 3x in the last few weeks. My only change is that I don’t use lemon but add lemon juice to the dressing. Thank you. It is such a delight to enjoy something so flavorful and healthy.

I bake it at 375. Marinate the chicken for an hour and veggies too. Making it again for the 3rd time. Delish! Easy yo make. I double the oil and spices

This was so quick to prepare and it was delicious. It was the perfect weeknight meal. I used 8 oz fresh mushrooms because I was out of artichokes and it turned out perfect. Thanks for a terrific recipe!
Omg, this was so so good! I used boneless chicken breast, sliced in half so it was thinner. It did cook faster so I took it out after the 25 min. The peppers were still a bit too raw for my liking at that point so I turned the oven to 450 and put the tray, minus the chicken back in for about 10 min. Then I added the cheese and olives and rest of the sauce back in for about 6 min. At end I sliced up chicken and tossed with veggies and put the whole thing under the broiler for a few minutes. Served in a pita with tzatziki. Oh, and I drizzled everything with a bit of balsamic glaze at the beginning. Be careful to take out the lemons before you eat! I will def be making again!
This is delicious!! I added baby potatoes and carrots instead of tomatoes since we didn’t have any. The artichokes, feta and olives added such great flavor. I cooked my bone-in chicken breasts separately since we like the skin crispy. Then cut it up and added to veggies. We all loved it and was easy to put together. Great recipe!

Delicious one-pan meal! I followed recipe exactly except for omitting olives. I served it on top of yellow (saffron) rice—complements perfectly. I served roasted Cut up potatoes as a side dish. And tonight I’m serving leftovers with a Greek tossed salad with homemade croutons. Wonderful recipe!!!!

This was excellent! I made extra sauce and marinated the chicken for a while before baking it. I used boneless skinless breasts and thighs, and the chicken was done at 25 minutes. I then increased the temp to 425 and cooked the veggies for 5 or 10 more minutes . Delicious!

My husband loved this! I browned the chicken thighs first ( he hates skin that isn’t browned). I used green tops of leeks, garlic flavored olive oil, and Fody Foods Lemon Herb Seasoning. I suffer from IBS but the substitutes make it perfect for me!

Hi Linda! If using chicken thighs leave them whole, and for large breasts I would cut them in half width wise to reduce the cook time. You can put everything on the sheet pan (chicken, veggies & sauce) a day in advance and then just pop it in the oven to bake 25 minutes before eating.

As I am sure you have read numerous times , as the old adage goes , “ I have never offered a review or comments but I felt compelled to do so. “. The reason being that this particular recipe actually made me Happy in an authentic and fun way. Thank you.
I was concerned about the vegetables and meat not cooking evenly, but it worked perfectly. Instead of the peppers, I used a bag of colored mini-peppers, which are thinner, and I cut them in half. Used some boneless, skinless chicken thighs and some tenders and all cooked well in my Ninja Flip oven. The meat was at a done temperature after 30 minutes, but I did an additional 8 minutes to warm the feta and kalamata olives. Those are the bomb for flavor! This will be a new favorite, especially for company, as it can be prepared ahead of time.
What type of artichoke hearts? Fresh, frozen or jar?
I live in Bangkok so fresh artichokes (any organ) are rare. But I located some canned hearts and they were fine.

Yep, I made this. Delicious and received rave reviews from those at the table. Served with just plain rice so as not to mask the Mediterranean flavours packed into it, and surprisingly juicy when the chicken and veggie juices leach out and mix with tea otherwise minimal liquids (an issue for me as I have no teeth, real or false, and need sauce or whatever to get things down – I refuse to eat puréed slop). Another diner is very picky in what he eats and loved this.

This recipe is amazing! So flavorful & pretty easy to make. I ended up having to make extra sauce & next time I make this, and there will be a next time, I will not double the balsamic vinegar. I made this but forgot the basil, feta and olives. I added zucchini and yellow squash. It was delicious! I made a double recipe for 6 people so we had leftovers. Everyone loved it . The kids could pick the vegetables they liked. Easy prep made it great for company.

This was incredibly DELICIOUS, BUT HOW THE HECK DID YOU COME UP WITH “10 MINUTE PREP?” Just to cut the veggies was over 10 minutes, then there’s the sauce! Am I missing something?

This is so delicious! I just love the combo of the flavors. The only thing I do differently is triple the marinade because I like a lot of it! I’m also wondering if it would add flavor to the chicken if I marinated the chicken in some of it first, but I haven’t tried it yet. Either way, it is one of my all-time favorite dishes!
The wonder aroma of this cooking was incredible!!! However I feel like the cherry tomatoes added way to much liquid and my veggies became steamed instead of roasted. Not much browning, in spite of cooking 10 extra minutes. Love the flavors but the texture was off. If I make again no tomatoes.

Quite good and we usually don’t eat peppers! For more mild peppers I used orange in lieu of red. Since I added fresh asparagus, I increased the sauce a bit. Super good and easy.
One of my favorite dishes. I add couple potatoes and eggplant and bake it in the oven I cast iron dish.
For chiken I prefer chiken tighs.

Do you eat the lemon ? —- it had not caramelised so maybe that was the problem.

We make this recipe all the time! I usually double the marinade and let the chick spend a half day hanging around it it. For the rest, I mix it up in a bowl before putting it on the sheet pan- just a little easier to get total coverage.
If I use a 9 x 13 baking/serving dish instead of sheet pan, will the vegies roast as well? I want to serve it to guests and the sheet pan is not very attractive as a serving dish.

Absolutely delicious! One of the best dishes I’ve made in years! I even impressed myself! Only suggestion is time prep definitely more than 10 min (unless you have extra hands helping). For me, prepping by myself, more like 25 min.

Was really good, but really watery, and tried getting chicken brown by broiling at the end. Could’ve done longer. What would you add fir some heat? Red pepper? Gardinere?

So good as it is but I love to tweak recipes. After marinating chicken I grilled it then added to the roasted veggies, made a whipped feta dressing for some accent. Delicious!
this recipe is full of flavour and very easy. Makes a trouble free lunch or dinner and shall certainly be making it again. I have also passed the recipe on to my son-in-law as he commented how tasty it was.
I love this dish but with one slight variation. I buy the large jar of marinated artichokes. In the morning I pour of the liquid marinade from the artichokes onto the chicken and store in a container in the fridge. When I am ready to start dinner the already marinated chicken goes on the tray with all those veggies. Using that extra flavor without throwing it away!

You can use red wine vinegar in place of balsamic

I was a little skeptical that a recipe this simple would be this delicious and was concerned the chicken may turn out a little dry. Happy to report this was incredibly flavorful and chicken was moist but I would consider marinating before next time. I added fresh dill, capers, small gold potatoes and broccoli because I had it on hand. Definitely adding to the rotation!
