Weekly Meal Plan: April 26th – May 2nd
This weeks meal plan has 2 brand new recipes to the blog, plus a few of my favourite recipes! The week starts with two fresh and flavour packed salads followed by Hawaiian Fried Rice which is a fun spin on cauliflower fried rice crossed with a Hawaiian pizza. We are switching things up on Thursday by having breakfast for dinner because the Mexican Breakfast Hash is so good you will want to eat it for any meal of the day! Saturday and Sundays dishes are both slow cooked, with a tasty Mexican shredded chicken that you can enjoy in a salad, bowl or tacos and super saucy Chinese 5-spice beef that is melt in your mouth tender. Monday – Citrus, Fennel, Avocado & Shrimp Salad
This refreshing Citrus, Fennel, Avocado & Shrimp salad is perfect for spring. It packs lots of flavour and takes just 20 minutes to prepare, making it ideal for a quick lunch or easy weeknight dinner.

Tuesday – Chicken, Avocado & Bacon Salad with Ranch Dressing
This BLT Chicken Salad from my cookbook (page 136) is a great recipe for anyone who says salads can’t be a meal. Wednesday – Hawaiian Fried Rice

Friday – Pistachio Crusted Salmon
