Air Fryer Artichokes

I have to be completely honest, these air fryer crispy artichokes completely exceeded my expectations. I have been on a total air fryer kick recently following the success of my air fryer gnocchi and decided to try using a can of artichoke hearts I had in my pantry. They turned out incredible! Crispy on the outside and deliciously tender in the middle. This is such a fun dish to make as a light snack or appetizer to feed a crowd, everyone will go crazy for them!

Ingredients You Will Need

  • Artichoke hearts: You will want to buy whole canned artichoke hearts in water not oil. Alternatively you could use frozen artichoke hearts that have been thawed.
  • Olive Oil: I love olive oil for this recipe, but any neutral oil with a high smoke point will work, like avocado oil, melted refined coconut oil, or melted butter.
  • Spices and Herbs: A simple combination of kosher salt, black pepper, garlic powder, and oregano makes them light and flavorful. 
  • Arrowroot powder: The arrowroot brings them to their perfect crunchiness. You can also use tapioca starch or corn starch.
  • Parmesan Cheese: The cheese gets golden brown and gives you umami flavor in every bite.
  • Mayonnaise: Use store-bought or make homemade mayo. You can also use Greek yogurt or sour cream.
  • Fresh Garlic: Finely chop the garlic cloves or use a garlic press to bring all the delicious flavor to life.
  • Basil: I like to chop fresh basil for the dip finely, but you can use dried basil and add more herbs like oregano or rosemary.
  • Lemon: Use both the lemon zest and fresh lemon juice to add a bright tanginess to the dip.

Air Fryer Tip

Be sure not to overcrowd the artichoke hearts, arrange them in a single layer in the air fryer basket so air circulates and they cook to crispy perfection.

How to Make These Air Fryer Crispy Artichoke Hearts:

  1. Preheat the air fryer for 5 minutes and cut the artichoke hearts in half. 
  2. Blot any excess moisture from the artichoke halves using paper towel.
  3. Add the artichoke hearts to a bowl and drizzle in olive oil and toss in spices and herbs. 
  4. Next, add the arrowroot powder stir and then the grated parmesan. 
  5. Arrange the artichoke hearts in the oil sprayed air fryer basket. 
  6. Cook them for 5 minutes, flip each of the artichokes over, and then cook for an additional 5 minutes. 
  7. While the artichoke hearts are cooking, stir together the lemon garlic aioli ingredients for dipping.

How to Modify:

  • Try a spice variety with smoked paprika, cayenne, or chili flakes for a bold, smoky heat, or use Italian seasoning if you want a strong herb flavor.
  • Finish with a squeeze of lemon juice and a sprinkle of thyme or rosemary right after cooking.
  • Use Everything But the Bagel seasoning for a nutty, garlicky twist.
  • Use bread crumbs instead of the Parmesan if you like a breaded topping.

Dietary Customizations

  • Dairy Free: Leave out the Parmesan or use dairy-free Parmesan
  • Low FODMAP: Omit the garlic
  • Egg Free: Try an Egg-Free Garlic Aioli in place of mayonnaise in the aioli

Serving Suggestions:

These are the perfect appetizer with your favorite dipping sauce or as a side dish or snack.

Try these on top of a salad, in a grain bowl, or on top of your favorite pasta or pizza. These would also be amazing stuffed in a sandwich, like this Ribeye Steak Sandwich

How do I store leftovers?

Keep the air-fried artichokes in an airtight container in the fridge for up to 3-5 days and recrisp in the air fryer at 400 degrees F for 5-10 minutes.

Can I freeze them?

Yes, but it’s best to freeze them before air frying. Lay seasoned artichoke hearts on a tray to freeze individually, then transfer to a bag. Air fry straight from frozen, adding a few extra minutes.

Can I make these in the oven?

You can bake these in the oven at 425 degrees F for 18-22 minutes, flipping halfway through to get them crisp and golden brown on both sides. I would recommend lining the baking sheet with parchment paper for easy cleanup. 

Can I use a fresh artichoke?


Yes! Green Globe Artichokes are the best artichokes to access during peak seasons, and cooking artichokes is quite easy. To get to the tender center of the artichoke, first use kitchen shears to trim the tough outer leaves and cut off the stem, then steam or boil the artichoke until the tender leaves pull away easily. Once cooked, remove the fuzzy choke with a spoon to reveal the soft, flavorful whole artichoke hearts ready for further preparation. 

Can I use frozen artichoke hearts

Definitely! Spread the frozen artichoke hearts on a plate or paper towel and let them thaw (microwave for a minute or two if you’re short on time). Pat them very dry and then cut them in half with a nice (if you are using whole artichoke hearts, you may find frozen quartered artichoke hearts which can be left as is).

Air Fryer Crispy Artichokes

These Air Fryer Crispy Artichokes are deliciously crispy ont he outside and tender in the middle. Serve them with a lemony garlic aioli for a fun appetizer.

Ingredients 

  • 1 can whole artichoke hearts in water
  • 1 tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp dried oregano
  • 2 tbsp arrowroot powder
  • 2 tbsp finely grated parmesan

Lemon Garlic Aioli

  • ½ cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp finely chopped basil
  • 2 tsp lemon zest
  • 1 tsp lemon juice
  • ¼ tsp salt

Instructions 

  • Preheat the air fryer at 400º Fahrenheit for 5 minutes
  • While the air fryer is preheating, remove the artichoke hearts from the can and cut in half (they are delicate so make sure you keep the halves intact)
  • Lay two pieces of paper towel on the counter and place the artichoke halves face down on the paper towel to absorb any excess moisture.
  • Add the artichoke hearts to a bowl and drizzle in olive oil.
  • Add in the garlic powder, salt, pepper, and oregano and gently stir to ensure they are well coated in the seasoning.
  • Next add the arrowroot powder and stir again to ensure all evenly coated.
  • Finally add in finely grated parmesan and stir one final time.
  • Generously spray the preheated air fryer basket with cooking spray.
  • Arrange the artichoke hearts evenly spaced out in the air fryer basket. If there is any excess parmesan from the bottom of the bowl, sprinkle it over the top of the artichokes in the basket.
  • Cook them for 5 minutes, after 5 minutes flip each of the artichokes over and then cook for an additional 5mins
  • While the artichoke hearts are cooking, stir together all of the ingredients for the aioli.
  • Serve the artichoke hearts with the aioli on the side for dipping.
