I’ve always loved ordering sweet potato wedges at restaurants, but getting them crispy at home used to feel impossible. I find that baking them in the oven results in a mushy and never crispy texture. It took a lot of trial and error before I discovered there are two tricks for getting crispy sweet potato wedges every time, firstly, cook them in the air fryer, and secondly, coat them in arrowroot powder (or cornstarch). They are now my go‑to healthy side dish and always a crowd‑pleaser.
My first time ever having luck with making sweet potato fries at home, they usually turn out mushy, but these were crispy and so tasty!

- Seasonings: kosher salt, black pepper, paprika, garlic powder, and chili powder for bold, balanced flavor.
- Arrowroot powder: The secret to crisp edges; cornstarch or tapioca starch also work.
Kitchen Tools You Need
- Air fryer
- Cutting board
- Sharp knife
- Measuring spoons
- Large mixing bowl
- Wooden spoon or spatula
How to Make These Air Fryer Sweet Potato Wedges
- Repeat with a second batch if needed.
- Preheat your air fryer.
- Cut sweet potatoes into wedges and place in a large bowl.
- Toss with olive oil and seasonings.
- Sprinkle arrowroot powder and mix until evenly coated.
- Arrange the seasoned sweet potato wedges in a single layer in the air fryer basket.
- Cook for 15–16 minutes, give the basket a good shake halfway through. Cook until they are golden brown with crispy edges.
Tips For THe Best Air Fryer Sweet Potato Wedges
- Cut sweet potatoes the same thickness for evenly crispy wedges.
- Don’t skip the arrowroot, it’s essential for crunch.
- If using a basket style air fryer, give it a little shake halfway through to prevent sticking and ensure browning.
- Make sure you give the wedges enough room in a single layer. Overcrowding is the most common reason for mushy sweet potato wedges as the hot air is unable to flow all around them and the wedges steam instead of crisp.
- Serve immediately for maximum crispiness.

How to Modify
- Reduce chili powder for a mild version; add cayenne pepper for extra heat.
- Leave out garlic powder for low‑FODMAP or sensitivities.
- Add dried herbs, Italian seasoning, onion powder, or cinnamon for variation.
- Add parmesan cheese or nutritional yeast for a cheesy finish.
- Swap sweet potatoes with russet or Yukon gold potatoes (adjust cook time).
- Cut into thin fries or cubes and reduce cooking time accordingly.

I am hesitant to buy another appliance, especially one that lives on my counter and takes up so much space! Can you share the type of air fryer you are using?
I was the exact same way but I can confidently say that my air fryer is the most used appliance in my house. I recently bought a Cosori and I really really love it.
