Pork tenderloin is one of my favorite meats to cook with because it’s generally very affordable and can be served in so many different ways (this Pork Medallion recipe is one of my favorite). I have yet to share a grilled pork recipe and wanted to create one with a bold sauce that would really pack a punch. I love the combination of miso, honey and dijon mustard in this sauce that creates a wonderful balance of sweet, salty and umami flavor. I like to leave the pork to marinate overnight for the best flavor, but have marinated for as little as 10-12 minutes and it has been delicious. The pieces of grilled spring onions threaded on the skewers between the pieces of pork add a wonderful sharp onion flavor to brighten each bite. Ingredients You Will Need


  • Pork Tenderloins: Substitute with pork shoulder, pork butt, pork chops or pork loin. Just cut the pork pieces into bite-sized pieces. 
  • Honey: You can adjust the sweetness to your liking and also use maple syrup or brown sugar.
  • Miso Paste: I recommend white miso paste because the flavor is mild and sweet. You can use red miso if you like a bolder flavor.
  • Dijon Mustard: Use whole grain mustard, spicy mustard, or regular mustard. 
  • Rice Vinegar: I love the flavor of rice vinegar paired with miso paste, but you can use apple cider vinegar instead. 
  • Sesame Oil: A delicious nutty flavor that is perfect in the marinade. You could also use olive oil.
  • Green Onions: Green onions, also known as scallions, have a mild flavor that is both sharp and sweet. 
  • Sesame Seeds: You can use white sesame seeds or black sesame seeds, or a combination of both.

How to Make These Grilled Pork Tenderloin Skewers


  1. Cut the pork tenderloin into 1-inch cubes and place in a large mixing bowl. 
  2. In a bowl, whisk together the marinade ingredients until smooth. Pour ⅔ of the sauce over the pork cubes and toss to coat well. Transfer the pork to an air-tight container  and leave in the fridge to marinate. Place the remaining ⅓ portion of the sauce in the fridge to use later.
  3. Heat grill to medium heat. 
  4. Cut the scallions into 1 ½ inch pieces.
  5. On metal skewers or wooden skewers, thread pork followed by a green onion, and repeat until all of the pieces of meat have been threaded onto skewers. 
  6. Place skewers on the grill and cook for 6 minutes per side, adjusting the cooking time as necessary. With a few minutes left to cook, generously brush with the reserved sauce. With an instant-read thermometer, check that the internal temperature reaches at least 145 degrees F. 
  7. Remove the pork kebabs from the grill, brush with any remaining sauce, and garnish.

How to Modify


  • You can use different cuts of pork for these grilled pork skewers, like pork shoulder or pork chops. You can also use chicken thighs, if you prefer.
  • Want seafood? This would be amazing with shrimp.
  • You can substitute the vinegar with lemon juice. 
  • Add your favorite vegetables like red onion, yellow onion, green peppers or mushrooms.

 

Dietary Modifications


To make these gluten free, be sure to check the label on your miso paste, a lot of brands are gluten free but some are made with barley koji which contains gluten. 

 

Pro Tip


If you’re using bamboo skewers, soak them in warm water for 20 minutes before adding the meat and green onions. This will help them not burn and help the pieces of pork slide on without slivering.

Prepping Ahead and Storing Leftovers


Meal-prep: Marinating the chunks of pork for several hours, or overnight, is not only convenient but also yields the ultimate flavor. You can also cut up the green onions the day before and have them ready to skewer. I would recommend storing them in separate airtight containers. 

Leftovers: Before storing the leftovers, always bring them to room temperature before putting them in an airtight container. They will last in the fridge for 3-4 days.

Ingredients
  

  • 2 pork tenderloin
  • 2 tbsp honey
  • 3 tbsp miso paste
  • 2 tbsp dijon mustard
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1 bunch scallions
  • 1 tbsp sesame seeds

Instructions
 

  • Cut the pork tenderloin into 1 inch sized cubes and place in a bowl.
  • In a small bowl whisk together the honey, miso, dijon mustard, vinegar and sesame oil until smooth. Pour ⅔ of the sauce over the pork pieces and toss to ensure they are all well coated. Transfer the pork to the fridge to marinate for a minimum of 20 minutes and up to overnight. Place the remaining ⅓ portion of the sauce in the fridge to use later.
  • Heat the grill to medium heat
  • Cut the scallions into 1 ½ inch length pieces
  • On metal or wooden skewers thread a piece of the pork followed by a scallion and then another piece of pork and repeat until all of the pork has been threaded onto skewers.
  • Transfer to the grill and cook for 6 minutes per side (watch and turn if it cooks too quickly and beings to burn). With a few minutes left to cook generously brush with the reserved sauce.
  • Remove the skewers from the grill, brush with any remaining sauce and garnish with sesame seeds before serving.
