I have zero self control when I see truffle fries on the menu at a restaurant and have to order them, every single time. It’s amazing how a little drizzle of truffle oil can completely transform a plate of fries. These crispy oven‑baked fries are tossed in fragrant truffle oil, parmesan, black pepper and fresh herbs for the perfect mix of saltiness, umami, and rich truffle flavor. For this truffle fries recipe I have included my favorite method for cooking oven fries, but you can easily use frozen french fries, or cook them in the air fryer if you prefer. Whether you’re serving them with burgers, steak, or as a party appetizer, these homemade truffle fries taste just like your favorite restaurant’s version.While you can enjoy them on their own, I love serving them with truffle mayonnaise to really up the truffle flavor.

Ingredients You Need For These Truffle Fries

  • Potatoes: I personally prefer using russet potatoes for the crispiest textured fries, but Yukon Gold potatoes or Red Potatoes also work. Just be sure to cut the potatoes into equal sized long and thin strips. 
  • Olive Oil: Use any neutral oil of choice such as olive oil, avocado oil or vegetable oil. 
  • Seasonings: Sea salt, black pepper, and garlic powder. Add onion powder or white pepper for more depth.
  • Truffle Oil: White truffle oil is milder and slightly sweet, while black truffle oil is earthier and more intense. Choose one made with olive oil (not extra virgin olive oil) so the truffle flavor shines through.
  • Parmesan Cheese: I prefer freshly grated for the best flavor
  • Fresh Parsley: Adds color and freshness to balance the richness.

How To Make These Truffle Fries

  1. Place the sheet pan in the oven to heat up as the oven preheats.
  2. Cut potatoes into thin fries and place all of the sliced potatoes in a bowl and fill with hot water. Leave to rest for 30 minutes.
  3. Drain the fries, and dry them as much as possible between a clean kitchen towel or paper towel. Place the fries in a dry bowl, add 1 tbsp oil, salt, pepper, garlic powder, and toss to coat well. 
  4. Drizzle the hot sheet pan with olive oil and then add the fries, ensuring they are well spread out in a single layer. You can add parchment paper if you want an easy clean up.
  5. Put the sheet pan in the oven and leave the fries to cook for 18-20 minutes.
  6. Once the fries are tender, remove the sheet pan from the oven and flip the fries over using a spatula. Turn the oven to broil and return the fries to the oven to cook for a few more minutes until golden. 
  7. Transfer the crispy french fries to a bowl, drizzle truffle oil overtop along with parmesan cheese and toss to ensure they are all coated in the oil. Place fries in a serving bowl or plate and garnish with parmesan and chopped parsley.

Tips For Crispier French Fries

  1. Make sure they are all even sized: when cutting the fries, try to make sure that you cut the fries in even sized strips. This will help to ensure that they all cook evenly. I prefer cutting the fries quite thinly for maximum crispiness. 
  2. Soak the Fries: soaking the fries in water helps to remove the excess starch and will result in a crispier fry. While some recipes call for the fries to be soaked in a large bowl of cold water, I have found that soaking them in hot water gives similar results but the hot water also helps to cook the fries as they soak, which results in a shorter cook time in the oven. 
  3. Dry the fries: for the best results be sure to remove as much excess moisture as possible from the potatoes for crispy fries. If there is excess water left on the fries, it will cause them to steam when cooking and become mushy.
  4. Use a large sheet pan: use a sheet pan large enough for the fries to lie flat in a single layer. If you do not have a large enough sheet pan I recommend working in two batches, or separating the fries between two sheet pans. This will ensure the fries become crispy rather than steam and become mushy when baking. 
  5. Preheat the sheet pan:  Adding the fries to a hot sheet pan will help them sear on the underside and reduce the cook time 
  6. Finish with broil: to ensure that your fries are golden brown in color.

Ways To Modify

  • Use truffle salt for extra truffle flavor
  • Make truffle sweet potato fries using the same method with sweet potatoes.
  • Swap parmesan for pecorino romano or sheep cheese for a sharper flavor.
  • Add spices like paprika, onion powder, or cayenne for a spicier version.

Dietary Customizations

  • Dairy Free: use dairy-free parmesan or sprinkle the fries with nutritional yeast for a cheesey flavor. 

Common Questions

Can I Make These Truffle Fries In The Air Fryer

Yes, air fryer truffle fries will be crispy and fresh and delicious! Although, depending on the size of your air fryer, you may need to cook the fries in single-layer batches so they don’t overlap. Simply prepare the potatoes as directed on the recipe card and when they’re ready to fry, preheat the air fryer to 375 degrees for 3-5 minutes. Lay in the air fryer basket and cook for 15-20 minutes, shaking halfway through. Transfer the air fryer fries to a large bowl, drizzle with a little truffle oil and sprinkle parmesan overtop

Can I Make These Truffle Fries In Advance?

Although truffle french fries are best enjoyed fresh (for maximum crispiness) you can partially prepare them ahead. To start, you can slice and par-cook the fries a day or two in advance and then allow them to cool to room temperature before storing them in the fridge. You can mix the seasonings together and make the truffle mayo sauce 2 days in advance, and also, store it in a separate airtight container. When you’re ready to serve them, mix them with the seasoning and continue cooking according to the directions on the recipe card below. Alternatively, you can make them according to the directions, store them in an airtight container in the fridge, and when you’re ready to serve, re-crisp them in an air fryer or under the broiler until warm and crispy again. 

What About Leftovers?

Leftover truffle fries will  last 1-2 days in the refrigerator in an airtight container. They will soften, but you can crisp them back up:
Air fryer: 350°F for 5–7 minutes
Oven: 375°F for 10–15 minutes (flip halfway)
Broiler: 5 minutes

Truffle Fries with Parmesan (Crispy Restaurant‑Quality at Home)

Crispy, golden, and loaded with rich truffle flavor and grated parmesan, these truffle fries bring restaurant‑quality taste straight to your kitchen. This easy homemade version uses simple ingredients to create the perfect umami‑packed fry that's oven baked, not fried.

Ingredients 

  • 1 lb russet potatoes
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1/2 tsp garlic powder
  • 2 tsp truffle oil
  • 2 tbsp finely grated parmesan cheese
  • 2 tsp chopped parsley

Instructions 

  • Preheat the oven to 425 degrees Fahrenheit and place the sheet pan in the oven to heat up as the oven preheats.
  • Cut the potatoes into thin fries (approximately ¼ inch in thickness). Place all of the sliced potatoes in a bowl and fill with hot water. Leave to rest for 30 minutes.
  • Drain the fries and then place them in a dish towel and completely dry them so there is no moisture.
  • Place the fries in a dry bowl and add in 1 tbsp oil, salt, pepper, and garlic powder and toss to ensure all of the fries are well coated.
  • Remove the hot sheet pan from the oven and drizzle with 1 tbsp of olive oil, and then add the fries, ensuring they are well spread out and not overlapping.
  • Put the sheet pan in the oven and leave the fries to cook for 18-20 minutes (keep an eye on them to ensure they aren’t burning).
  • Once the fries are tender, remove the sheet pan from the oven and flip the fries over using a spatula. Turn the oven to broil and return the fries to the oven to cook for a few more minutes until golden.
