I’ve always loved making sliders when I’m feeding a crowd because they’re just so easy to pull together, and everyone can grab exactly how many they want. These French dip sliders take that simplicity up a notch with the tender roast beef and melty provolone (seriously, the cheese pull is insane!) are already irresistible, but dunking them in the rich, homemade au jus completely elevates them. I love watching everyone enjoy these as they disappear into the satisfying mess of dipping, melting, and savoring each bite.

Why You Will Love These French Dip Sliders
- This quick and easy recipe comes together fast, but tastes like you put in way more effort.
- Buttery, golden rolls and an incredible cheese pull make this recipe pure delight.
- The savory au jus takes them from good to completely addictive; you’ll be going back for seconds.
- These delicious sliders are kid-friendly and perfect for an easy weeknight dinner.
- Make a double batch and feed a large crowd for game day or a random Tuesday gathering.

Ingredients You Will Need
- Slider Buns: I used sweet Hawaiian rolls for these because they’re soft, and their sweetness balances everything perfectly.
- Butter: Adds richness and helps build flavor at every step. You can also use olive oil or avocado oil.
- Yellow Onions: Slice them thinly to caramelize and add the most delicious flavor to this slider. You can also use white onions if you prefer.
- Horseradish: Brings gentle heat and sharpness. Try my Creamy Horseradish Sauce as an alternative.
- Mayonnaise: Creamy base that mellows and binds the horseradish sauce. Use store-bought mayo or make homemade mayo.
- Roast Beef: I recommend thinly sliced deli roast beef for this recipe because it helps the sandwich hold together better but feel free to use leftover roast beef, just be sure to slice it thinly.
- Provolone Cheese: Provolone cheese is a mild, melty cheese that complements the beef and is classic on French dip sandwiches.
- Spices and Herbs: Salt, black pepper, thyme, garlic powder, and fresh parsley add depth and savory flavor in all the layers.
- Fresh Garlic: You’ll want to finely mince the garlic with a microplane grater or a garlic press to release full flavor.
- Flour: Used in the roux of the au jus sauce to give a delicious, thick consistency:
- Beef Broth: Creates the savory base flavor for the dipping sauce.
- Worcestershire Sauce: Adds a subtle tang and a delicious umami tang.

Low and Slow
Caramelize the onions slowly. Low and slow is key to bringing out natural sweetness and deep flavor without burning. Add a splash of water along the way to prevent them from drying out or burning.
How to Make These French Dip Sliders
- Melt the butter in a skillet and add the sliced onions, with salt and thyme. Cook until the onions are soft and caramelized. Add a splash of water if needed.
- Preheat the oven.
- In a bowl, stir together the horseradish and mayonnaise and set aside.
- Carefully slice through the buns horizontally so that they are all connected as one sheet. Place the bottom buns on a baking sheet, then top with the roast beef, the provolone cheese, and caramelized onions. Spread the horseradish mayo over the top half of the buns and then place the top half of the buns onto the sandwiches to close.
- In a bowl, stir together the melted butter mixture, then brush it all over the top buns. Cover the buns with aluminum foil and bake until the cheese is melted. Remove the foil and bake until the buns are golden brown on top.
- Make the au jus; melt the butter in a saucepan on medium-high heat. Add the minced garlic and cook for 1 minute, then whisk in the flour to form a roux. Whisk in the beef broth and Worcestershire sauce until it’s all incorporated. Leave to simmer until it begins to thicken, and then remove from the heat. Season as needed and serve the sliders with a bowl of the au jus for dipping.

How to Modify
- If you prefer, you can try Air Fryer Roast Beef and thinly slice or shred a chuck roast for delicious results.
- Switch the cheese for Swiss cheese, mozzarella for extra melt, or gruyère for something a little fancier.
- Not a fan of horseradish? Try Dijon or grainy mustard, or garlic aioli instead of horseradish mayo.
- Try hoagie rolls, brioche rolls, or regular dinner rolls instead of Hawaiian sweet rolls.
Dietary Customizations
- Gluten-Free: Use gluten-free rolls; check that your Worcestershire sauce is gluten-free or use coconut aminos, and swap the flour for arrowroot flour or gluten-free flour.
- Dairy-Free: Use your favorite dairy-free sliced cheese and use vegan butter or olive oil.
- Vegetarian: Replace beef with sautéed mushrooms and use vegetable or mushroom broth for the dipping sauce.

Yes! You can assemble the sliders, cover, and refrigerate. Bake just before serving to keep them warm and melty. Make the au jus up to 3 days and store in an airtight container. Reheat gently over medium heat, adding a splash of broth if needed.
Provolone is classic and my preferred choice, but Swiss, mozzarella, or gruyère all melt beautifully.
Yes! Use plant-based butter and your favorite dairy-free cheese. Follow Your Heart and Daiya have great options.
Substitute gluten-free slider buns and thicken the au jus with cornstarch, arrowroot, or one-for-one gluten-free flour.
Keep leftover sliders in an airtight container in the fridge for up to 3 days. Store the au jus separately in a small jar or container.
Reheat the sliders at 350 degrees F for 5 to 10 minutes, covered with foil so the buns don’t dry out. Warm the au jus on the stove or in the microwave.
