Greek Chicken Gyro Bowls
These Greek Chicken Gyro Bowls are incredibly tasty and packed with tzatziki, spiced chicken, creamy feta, crunchy veggies and pickled onions. This is a great recipe to meal prep for the week and enjoy for easy meals.
There is something about a large bowl packed with food that makes me so happy. While I love a chicken gyro, adding all of the ingredients to a big bowl that brings me so much joy. These Greek Chicken Gyro Bowls are packed with all of my favorite greek flavors, tzatziki, feta, cucumbers and pickled onions, plus the most delicious spiced chicken. These greek bowls are one of those meals that you will find yourself making over and over again because they are just so tasty.

- If you enjoy greek food then you will love the fresh flavors reminiscent of chicken gyros. The delicious combination of spiced chicken, fresh vegetables (cucumber, tomatoes and lettuce), creamy tzatziki sauce, pickled onions and feta cheese is so so good.
- There is absolutely no marinating required to make this delicious chicken, just combine all of the spices with the cubed chicken and pop it in the oven, it’s so easy.
- This is a favorite weeknight meal in our house, it’s incredibly fast to make, and I like to double the recipe so that we can have leftovers in the fridge for lunches over the following few days.
- Although there are a few components to these easy Greek Chicken Bowls, they take less than 30 minutes to make.
- These Gyro Bowls are Gluten Free and can easily be modified to be Paleo, Dairy Free, Low Carb, Grain Free and Specific Carbohydrate Diet Legal.
What Is In This Greek Gyro Chicken Bowl
- Chicken: This will quickly become your new favorite way to cook chicken. This chicken is a staple in our house that we have in the fridge to add to salads, bowls and eat smothered in tzatziki. It couldn’t be any easier to make and requires zero marinating or fancy ingredients, just olive oil and a handful of spices (paprika, garlic powder, onion powder & oregano) that you likely already have in your spice cupboard. The trick is to cut the chicken into cubes so that it cooks quickly in the oven, and then shred it and put it back into the pan that it was baking in so that it absorbs all of the spices. It it so flavorful that it tastes like marinated chicken, but actually takes 25 minutes to make start to finish.
- Tzatziki: either store-bought or homemade will work. The tangy tzatziki sauce is the perfect pairing for the spiced chicken.
- Lettuce: I like using finely shredded romaine lettuce because I find that it best withstands the weight of the other heavy ingredients in these bowls. Finely shredded iceberg lettuce, fresh greens or spring mix can all be used instead.
- Tomatoes: I like using cherry tomatoes or grape tomatoes for the best sweet flavor.
- Cucumbers: I like using thinly sliced persian cucumbers as I find they have a slightly sweeter flavor, but english cucumbers can also be used.
- Feta: I recommend using wedges or blocks of feta which you can crumble yourself rather than buying the already crumbled feta which I find is less creamy in consistency.
- Rice: I like using brown rice in this greek bowl recipe, but white rice or cauliflower rice can also be used.
- Pickled Onions: This is a quick pickle, so the red onions don’t have time to become super pickly and instead just become tender and slightly acidic. They add so much flavor to the bowls and are something that I would not recommend skipping, they really elevate the flavors to the next level. Slice the red onion paper thin.
- Mint: I find that chopped fresh mint adds a wonderful freshness to the dish, but if you do not have mint, other fresh herbs such as chopped flat leaf parsley or oregano would also work.

What Type of Chicken Is Best?
I prefer using boneless skinless chicken breasts for this dish but boneless skinless chicken thighs would also work well.If using thighs I recommend only cutting them in half rather than smaller sized pieces so they don’t overcook in the oven.
What Type of Tzatziki Can I Use?
When everything in the bowl is stirred together, the creamy tzatziki acts as a dressing for the salad. To save time use your favourite store bought tzatziki, there are so many different types you can find including dairy free tzatziki made by brands like kite hill and trader joe’s. Alternatively homemade tzatziki sauce is incredibly easy to make. I have this recipe for a dairy free tzatziki which is made with a blended cashew base and can be made a few days in advance and kept in the fridge. For a dairy option simply mix plain greek yogurt with grated cucumber, minced garlic, lemon juice and fresh dill.
How Long Will The Pickled Onions Last?
The pickled onions can be left for 3-5 days stored in the pickling liquid in an airtight container in the fridge. I like adding them to salads, sandwiches, bowls, tacos or on top of grilled chicken or beef. They add a kick of flavor to any meal and you will find yourself adding them to everything you eat.
How To Make This Gyro Bowl Paleo or Whole30
These Gyro Bowls can easily be modified to be Paleo, Whole30 or Specific Carbohydrate Diet Legal if you do the following:
- Use a dairy free tzatziki, here is a link for my delicious dairy free tzatziki which is Whole30, Paleo, Vegan and SCD legal.
- Swap the brown rice for sauteed cauliflower rice, or skip the rice portion all together and add more lettuce.
- Skip the feta cheese
Ways To Modify These Greek-Style Chicken Bowls:
- Add in some chopped black olives such as kalamata olives
- If you want to add more veggies to this gyro bowl recipe, add in some thinly sliced bell peppers with the tomatoes and cucumber.
- For extra protein you can add chick peas to the bowls.
Can I Make These Chicken Gyro Bowls in Advance?
I recommend only assembling these Gyro Bowls right before serving and rather preparing all of the components and storing them separately. It’s a great recipe for meal prep because everything can be made in advance and stored in the fridge in separate containers for up to 3 days before assembling and eating. The rice and chicken can be reheated in a large skillet on medium-high heat on the stove top until warmed through, or in the microwave.

Greek Chicken Gyro Bowls
- 4 chicken breasts
- 1 tbsp paprika
- 1 tbsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp salt
- 1 tsp pepper
- ¼ tsp cayenne
- ⅓ cup olive oil
Pickled Red Onions
- ½ red onion very thinly sliced (paper thin)
- ¼ cup apple cider vinegar
- 1 tsp honey
- 2 tbsp water
- 2 heads romaine shredded
- 4 Persian cucumbers thinly sliced
- 1.5 cups cherry tomatoes halved
- ¾ cup feta crumbled
- ½ cup Tzatziki
- 2 cups cooked brown rice
- ¼ cup chopped fresh mint
- Preheat the oven to 425F
- Cut the chicken into large chunks approximately 2 inches in size. Place them in a tinfoil lined baking dish, add the olive oil and all of the spices and stir with a spatula to ensure they are all well coated. Transfer to the oven to bake for 20 minutes
- Once the chicken is done cooking, using two forks (or I sometimes just let the chicken cook slightly and then use my fingers to shred it into large shredded pieces). Mix the shredded chicken in with any of the leftover spices and oil in the bottom of the pan so that it soaks it all up.
- In a small bowl whisk together the apple cider vinegar, honey and water. Microwave for 40 seconds until warm and then add in the onion slices. Press down on the onions slices to ensure they are submerged. Leave to “pickle” for 20 minutes
- To assemble, add 1 ½ cups shredded romaine to each bowl, add approx 1/2 cup cooked brown rice to each bowl followed by the shredded chicken, tomatoes and cucumber slices. Crumble feta overtop, add 3-4 big dollops of tzatziki to each bowl and the pickled red onions, sprinkle with fresh chopped mint.
