Weekly Meal Plan: March 1-7

 

This weeks meal plan has a great variety of dishes. Weekday dinners are all Whole30 dishes that are easy to make and very tasty. We have included a kung pao cauliflower for meatless Monday, a hearty soup on Tuesday and my absolute favourite meatballs on Wednesday which you can eat on their own or serve with cauliflower rice or a salad. Both Thursday and Friday nights dishes are easy to make yet fancy enough to serve to guests or enjoy for date night. I think you are going to love the selection of dishes we have put together for the week.

Monday – Kung Pao Cauliflower

This Kung Pao Cauliflower is a healthy spin on one of my favourite Chinese dishes that packs a serious punch of flavour. It’s a great vegetarian and vegan alternative to the traditional spicy dish that is Whole30 and Paleo and takes just 30 minutes to make!

Tuesday – Stuffed Pepper Soup

Stuffed Pepper Soup

This chunky Whole30 Stuffed Pepper Soup is packed with ground beef, red peppers and cauliflower rice. It’s a hearty low carb soup that freezes well and is perfect for winter. It’s Whole30, Keto, Paleo and Specific Carbohydrate Diet Legal. 

Wednesday – Asian Pork Meatballs

These Asian Meatballs are sooo tasty! The incredibly moist and flavourful meatballs can be made with  pork, ground turkey or chicken and they are oven baked and coated in a sticky sauce. Enjoy these as a main dish or appetizer, everyone will love them! They are Paleo, Whole30, Grain and Gluten Free. 

Thursday – Seared Scallops on Cauliflower Puree

Seared Scallops on Cauliflower Puree

These Seared Scallops on Cauliflower Puree are a great 30-minute meal when you want to impress. The scallops are seared until they form a golden crust and served on a creamy cauliflower puree with a simple sauce and crispy bacon. This dish is Paleo, Whole30, Grain Free, Gluten Free, Dairy Free and Specific Carbohydrate Diet Legal. 

Friday – Balsamic Chicken & Grapes

Balsamic Chicken & Grapes

This one-pan Balsamic Chicken & Grapes from my cookbook (page 188) is fancy enough to serve to guests but easy enough to make for a weeknight dinner. The combination of chicken, juicy grapes, and a balsamic sauce creates a richly flavored dish that pairs wonderfully with a side of cauliflower mash.

Saturday – Eggplant Polpette (aka Meatless Meatballs)

These Eggplant Meatballs are a fun vegetarian spin on meatballs. They are super moist and flavourful and packed with chunks of sautéed eggplant, garlic and onion, baked in the oven and then served in a rich tomato sauce. Sunday – Barbacoa BeefBarbacoa Beef

This Whole30 Barbacoa Beef is so tender it melts in your mouth, has a rich sauce and is so versatile it can be served in endless ways including tacos, salads or rice bowls. The beef requires just 20 minutes of hands on prep time, and then slowly cooks until it’s fork tender. This beef is Whole30, Keto, Paleo, Grain Free, Gluten Free, Dairy Free and Specific Carbohydrate Diet Legal.
