Grilled bread has become one of my favorite little additions to a meal because it instantly makes even the simplest dinner feel special. I love how just a few minutes on the grill transforms the pizza dough into something warm, smoky, and perfectly crisp, after it’s brushed with a delicious spiced olive oil. This is always the first thing to disappear whenever I serve it to family or friends.

Why You Will Love This Grilled Bread
- You won’t believe how easy it is to make in a matter of minutes.
- It pairs with almost everything, from soups, salads, grilled meats, pasta, and more.
- Easy clean-up! Just a few simple ingredients and a hot grill are all you need.
- Make it all year long on an indoor grill pan or on a cast-iron skillet.

Ingredients You Will Need
- Pizza Dough: This simple ingredient makes this recipe fool-proof and so simple! I like using pillsbury pizza dough which comes in a tube but any pizza dough would work (or you could even use homemade!)
- Extra Virgin Olive Oil: I love the nuttiness of olive oil for this recipe, but you can definitely use avocado oil as well.
- Spices: I made a combo of salt, garlic powder, black pepper, and Italian seasoning. Let your imagination run wild with the spices and make it your own!
Kitchen Tools You Will Need
- Small Bowl
- Outdoor Grill
- Grill Brush
tips for The Best Grilled Bread
- Wait for the grill to heat up before adding the bread, this will ensure it doesn’t stick
- If the bread is stuck to the grill, leave it to cook a little longer.
How to Make This Grilled Bread
- Preheat the barbecue to medium heat.
- In a small bowl, whisk together the olive oil and spices.
- Unroll the pizza dough from the tube and cut it into 4 equal-sized rectangles.
- Place each of the pieces of dough on the preheated grill, laying them out flat and at least 2 inches apart from one another.
- Brush the top of each piece of dough with some of the oil mixture. Close the lid and leave to cook until the underside of the bread is golden brown in color and grill marks form.
- Flip the bread and brush the other side of the slices with the oil mixture. Leave to cook until golden brown.
- Serve warm with olive oil dipping oil and a sprinkle of flaky sea salt.

How to Modify
- Sprinkle with freshly grated Parmesan, mozzarella, or crumbled feta or goat cheese while it’s still warm.
- Add some spice with crushed red pepper flakes, chili crunch, or a drizzle of hot honey.
- Try a Mediterranean spin with hummus, olives, cucumbers, feta, roasted red peppers, and a squeeze of lemon. Grill it first and then add the toppings while it’s warm.
Dietary Customizations
- Gluten-Free: You can find some great gluten-free pizza doughs out there, or you can make your favorite recipe.

Common Questions
A charcoal grill will give the bread a slightly smokier flavor, while a gas grill offers more consistent heat. You can also use a smoker grill on high, and it will give a delicious smoky flavor as well.
Grilled bread is best served fresh, but you can grill it a few hours ahead and reheat it briefly on the grill or in a warm oven before serving.
Yes! Both fresh refrigerated dough and homemade dough work well. While pre-made dough is crispier, traditional homemade pizza dough creates a chewier, more substantial grilled bread. Make the dough with bread flour, yeast, warm water, olive oil, salt, and a touch of sugar until a smooth dough forms, then knead it until elastic. Let it rise until doubled in size, then stretch it into your desired shape and use it as directed.
Let the grilled bread cool completely, then store it in an airtight container or ziploc bag at room temperature for up to 2 days or refrigerate it for up to 5 days. If your bread has fresh toppings that you added, it’s best to refrigerate it.
